Introducing the Maple Pear Almond Cobbler

This fall, we invite you to tickle your taste buds with the Maple Pear Almond Cobbler.  Prepared with or without gluten, this traditional favorite hits all the right notes for sweet-tooth satisfaction

 

Ingredients
1 c – flour [or gluten free flour]
2 t – baking powder
½ t – baking soda
pinch of salt
½ c – butter, at room temperature
1 c – brown sugar
1 c – finely ground almonds
2 – eggs

½ c – maple syrup
2 – firm pears, peeled, cored and thinly sliced

 

Whipped Cream
1 c - whipping cream
1/4 c - icing sugar

Instructions
In a bowl add the flour, baking powder, baking soda and a pinch of salt, mix well and set aside.
In another bowl, add the butter and sugar and beat until fluffy. Add the ground almonds and beat until it returns to being fluffing. Beat in one egg at a time, allowing it to become fluffy before adding the second one. Do the same. Now fold in the flour mixture, mixing only until smooth. Set aside.

Arrange 8 ramekins onto a perforated baking sheet and arrange some of the sliced pears in each. Divide up the maple syrup and add to each, then spoon the batter over top of this. Place in the oven on rack #2 and set to 210º on the steam mode. Steam for 25 to 30 minutes or until the cobbler springs back in the centre.
